A team of students from the Diploma in Food Science & Technology (DFST) has achieved 1st runner-up at the Singapore Institute of Food Science and Technology (SIFST) Student Symposium 2025 held on 20 June 2025. The symposium brings together students from polytechnics, universities, and postgraduate institutions to contribute papers, focusing on food science and technology.
The winning project, titled 鈥淎pplication of Medium Chain Triglyceride (MCT) in Plant-Based Meat Development,鈥 was part of the students鈥 industry-sponsored Final Year Project. Conducted in partnership with KLK OLEO and Tai Hua Food Industries, the project explored the use of MCTs to enhance the nutritional profile, texture, and flavour release of plant-based meat products. The formulation also incorporated Moromi, a soy waste by-product, highlighting a strong commitment to sustainability and circular food innovation.
